Amanda's Old-Fashioned Jewish Brisket

Courtesy of my mom.

Less time is needed for less meat, but still about two hours.

6 pound brisket
2 onions, sliced
1 clove garlic, minced
1/4 cup brown sugar
1/2 cup vinegar
1 cup ketchup
1 cup water
1 tablespoon salt

Place brisket in heavy, heated Dutch oven. Sear (brown) on all sides on medium flame. Add onions, garlic, and brown again, approximately 10-15 minutes. Add remaining ingredients. Cover pot and simmer until meat is tender, about 2 1/2-3 hours. Serves 10.
